I don’t know who needs to hear this, but dinner doesn’t have to be complicated to be good.

Step 5: Cook When You’re Ready (and Keep It Simple)
Each recipe is made with easy ingredients and minimal steps.

Tips and Suggestions

  • Occasionally, when you lower the number of servings, things tend to cook a little faster. So be sure to check on things before the time is up if you are cooking for two.
  • You can use a 6-inch pie pan for the pot pie if you are cooking for two.
  • If you are cooking for two, you will have half a can of condensed soup left over. You can refrigerate it for 3-4 days or seal it up and keep it in the freezer for 2-3 months.
  • I used a 28-ounce container of Sweet Baby Ray's for the BBQ. It is gluten-free. I like the sweet flavors, but you can choose your favorite. Again, the BBQ is optional with the shredded pork.
  • Grape and cherry tomatoes can be used interchangeably, so there is no need to buy both. You can pick one or the other and use it in both recipes that call for it.
  • Refrigerated pie crusts usually come with two in a package. If you are cooking for two people, freeze one of them. Then, you can roll out the other, slice it in half, and use those for the beef pot pie.
